Do you know how to make bread without yeast? This is a bread made with leaven- water and flour that has been fermented. This fermented leaven is what gives sourdough bread it’s rise and flavor. Baking Sourdough is a skill we should all have in our back pockets for that rainy day.
The intimidation factor with sourdough is high. But its really quite simple and I'm here to tell you- Anyone can do it! There is a learning curve- It took me 2 years to get it right because I lacked baking skills! Today I can teach you how to bake sourdough simply so you can have a successful loaf every time!

Basic sourdough recipe
Active Leaven (make 12 hours prior)
75g water
75g flour
75g starter
For Sourdough combine
All of the fermented leaven from above
475g water
700g bread flour
Mix into a shaggy dough and rest 30 minutes.
Add salt water 20g salt to 50g water.
Dissolve salt.
Squish salt water into dough.
Rest 30 minutes then begin stretch and folding. See this video for the method. Repeat every 30 minutes 4-6 times.
Divide dough into ( 2 ) 710g boules.
Shape 2 rough boules, rest 30 minutes Final shape, place in a floured banneton, refrigerate 12-48 hours then bake cold dough.
Bake in a pre preheated dutch oven at 500'f for 15 minutes. Turn down heat to 425'f and bake 10 minutes. Remove lid and bake 5-10 more minutes. Cool on a wire rack.
